Jerk chicken

Here's a favourite of mine, good for 2 chicken breast.

1.5 t ground thyme
1 t All spice
1/2 t Cinamon
2 t pepper
1 t Salt
1/4 t nutmeg
1/4 t chilli flakes
green onion
red spanish onion
olive oil

combine all the spice, put chicken breast(cut up) and olive oil in a pan then add spice and cook. use enough olive oil so that it kinda makes a sauce and stays moist while cooking in the pan.

i make mine by adding cayenne.
also, for better flavor and less oil in the pan, marinate the chicken or pork in the spices, olive oil and enough orange juice to cover all the chicken in a large bowl in the fridge for 2-3 days and then bake it in the oven.

ya you can keep it in the fridge for a few days,were only allowed 48 hours in food service but thts because of quantity of food,ive kept chicken for 5 days no prob,gets a little dry in the fridge,but thats about it.your not gonna wanna eat it past 3 or 4 days most times just cause it dont taste as good but it wont hurt you.just cool it as soon as your done cookin it, big myth let it cool at room temp before fridge,you wanna cool it as fast as you can,less time in danger zone temp wise is what you want,thats what gets people sick

Nice receipe. I dont trust Grace foods however. Too much monosodium glutamate in their ingrediants.

As a side note I always thought the Jerkl process was a result of free Maroons and not the product of slaves. Just another reason why Grace is not Jamaica's friend.
